I have so much love for Burrata that I’ll almost always order it if it’s on the menu. Recently, I’ve also been experimenting with it at home. My most recent concoction is a Burrata mint salad. The nice thing about this one is the greens combined with the cheese keep it light and make it into a nice side. Also, what seems like an impressive dish takes only 10 minutes to prepare!
- 8oz Burrata (I usually get this at Whole Foods)
- 1oz chopped fresh mint
- 1/2oz chopped arugula
- 1 chopped green onion
- Juice of half a lemon
- 1/2tbl spoon extra virgin olive oil
- 1/2oz pine nuts
Prepare the greens by combing chopped mint, arugula, and scallions. Add olive oil, lemon, salt and pepper. Prepare pine nuts by toasting in pan until golden. Lay out the Burrata, cover with the greens and the pine nuts. And it’s ready to be served!
